# Method:
01 - Preheat oven to 350°F. Grease and line two 9-inch round cake pans with parchment paper.
02 - Whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in a large bowl.
03 - Beat eggs, granulated sugar, and brown sugar until light and fluffy. Gradually add vegetable oil, applesauce, and vanilla extract, mixing well.
04 - Fold dry ingredients into wet mixture until just combined. Stir in grated carrots and, if using, nuts and raisins.
05 - Divide batter evenly between prepared pans and bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
06 - Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
07 - Beat cream cheese and butter until smooth. Gradually add powdered sugar, vanilla extract, and pinch of salt, beating until fluffy.
08 - Place one round cake as the bunny's face. From the second cake, cut two symmetrical ovals for ears and use remaining pieces for bowtie or feet.
09 - Generously frost assembled cake with cream cheese frosting.
10 - Sprinkle shredded coconut over frosting to resemble fur.
11 - Tint a small amount of coconut pink and apply to ear centers and nose accordingly.
12 - Use candies or chocolate chips for eyes and marshmallows for cheeks and tail.
13 - Decorate with edible flowers, pastel candies, or sprinkles as desired.
14 - Refrigerate assembled cake for at least 30 minutes to facilitate slicing.
